A sample menu

*All breakfasts will be served with a selection of cold cereal, yoghurt and fresh fruit, along with juice, coffee or tea

 *At sunset we will serve snacks to accompany your sundowners and beers, such as dips, canapés, chips and salsa.

 DAY ONE

DINNER – BBQ Cajun style blackened chicken, served with minty cucumber salad and fragrant noodles, followed by Pineapple upside-down cake

 

DAY TWO

BREAKFAST – A selection of muffins

LUNCH – Island Curry, served with flatbread and rice

DINNER – Mahi-Mahi with fresh papaya salsa, served with grilled vegetable skewers and wild rice

 

DAY THREE

BREAKFAST -Egg and bacon or sausage baps

LUNCH – Rasta Nachos, served with all the trimmings

DINNER – Pasta a la creole, with a side of garlic-chile cauliflower, followed by Baked bananas a la celeste

 

DAY FOUR

BREAKFAST – French Toast served with blueberries

LUNCH – Crab quiche, served with carrot salad

DINNER – BBQ Steak with a selection of sauces, served with mixed garden salad with mustard vinaigrette, grilled potatoes and corn-on-the-cob

 

DAY FIVE

BREAKFAST – Antiguan pepper omelette with hash browns

LUNCH – Ligurian pesto pasta salad

DINNER – Caribbean Shepherd’s Pie, served with stirfried vegetables, followed by  Fresh fruit meringues

 

DAY SIX

BREAKFAST – Banana-chocolate chip pancakes

LUNCH – Spinach Rockefeller, served with tomato salad

DINNER – West Indies Burgers, served with mixed salad, corn-on-the-cob and potatoes

 

DAY SEVEN

BREAKFAST – Spiced banana bread

LUNCH – Chicken mango-lime wraps, served with potato chips

DINNER – Marinated mahi-mahi served with a medley of vegetables and pine-nut cuscus, followed by Brownies with nutmeg whipped cream

 

DAY EIGHT

BREAKFAST – Traditional English Breakfast, with eggs, sausages, bacon, beans and toast

LUNCH – Mediterranean-Carib Tabouleh salad, served with toasted bread
